Spring

When in London in Spring 2021, I had a wonderful day cooking up recipe suggestions with Agatha as we imagined food pairings to go with Château George 7 Blanc. So here are a couple of ideas for dishes that will Spring you into Summer with ingredients that can be swapped according to what is in season or you have on hand. Bon appétit!

 Recipe Idea 
 

CRAB AND MANGO SALAD WITH CHILLI-LIME DRESSING 

Fresh, zesty and light and just perfect as a starter or for a lovely main course for lunch.

Prep: 20 mins

Serves: 4 as a starter, 2 for a main course salad

This fruity salad is based on the crab and green mango salad by Christina Ong and you can easily adapt it according to the ingredients you have to hand.

 Recipe Idea 
 

PEARL BARLEY RISOTTO WITH SPRING VEGETABLES 

This is inspired by Pearl Barley Risotto by Daylesford, 'A Love for Food'. 

 

The beauty of this dish is that it is made with pearl barley rather than rice so you can add the stock all at once because it cooks differently to rice.

Prep: 10 mins 
Cooking: 45 mins 

Serves: 4

SPINACH AND SHIITAKE MUSHROOM TART

What is more enjoyable than a tasty yet simple lunch with a couple of friends that you haven't seen in far too long. Add a bottle of smooth red wine and voilà!

 

This recipe is suitable for vegans. It suggests shiitake mushrooms but you can use portobello or any other mushrooms that you prefer or can get hold of easily.

Prep: 40 mins (+ 30 mins chilling in fridge)
Cook: 45 mins

Serves: 8

Accompany with Château George 7 or Prince de George 7.

POACHED SEA BASS, FENNEL CREAM & GRAPEFRUIT CONFIT  

This recipe is a mouthwatering combination of flavours that make a really special lunch or main course for dinner. Several of the elements can be prepared in advance and then the fish cooked at the last minute. Add a crisp and fruity white wine and satisfaction guaranteed.

Prep: 40 mins 
Cook: 45 mins

Serves: 4

You can substitute the sea bass with another white fish according to taste.
