Grape Variety: Merlot

Soil: Clay on limestone plateau

Age of Vines: 35 years

Harvest: By hand. Selective sorting both manual & using an optical sorter.

Fermentation: 500 litre French oak barrels - 30% new oak

Ageing:  225 litre French oak barrels for 18 months. 30% new and 70% 1-year old oak barrels

Alcohol Volume: 14.5% abv

Low sulphites:  <70mg/l (organic limit <100mg/l)

Bottled: At the Château - July 2021
