Château George 7 is a boutique winery on the right bank of Bordeaux in the village of Saillans. Established in 2017, from a parcel of 40 year old vines, we produce a range of award-winning red and white wines - AOC Fronsac red wines and a white AOC Bordeaux Blanc.
Our name reflects our mission - to blend the best of the heritage and tradition of Bordeaux with forward-looking wine-making approaches and techniques.
At Château George 7, we believe that good wine is more than just a delight for the palate—it’s an experience for all the senses and a wonderful way to connect with others. On the limestone plateau of Saillans, 70 meters above sea level, Merlot finds its most elegant expression. Across our intimate 3-hectare estate, we tend to each parcel with a gardener’s precision, listening to the specificities of the soil to encourage the very best the terroir has to offer.

Micro-Scale Production: We intentionally limit our yield to focus on uncompromising quality. Because the best stories - and the best wines - are never mass-produced.

Artisanal Vinification: We honour the potential of our fruit through fermentation in 500-litre French oak barrels and our signature 3,000-litre oak cask for our Royal Reserve.

Conscious Stewardship: Our 'common-sense' approach to sustainability focuses on meaningful impact: from using lightweight glass with high percentage of recycled material to reduce our carbon footprint to selecting labels ethically bleached with stones.

FOUNDER OF CHATEAU GEORGE 7
AUTHOR OF MAKE THE MIDLIFE MOVE
After nearly three decades living and working in France, and as her children left home, Sally began studying wine with WSET and planning a major midlife change. With no previous wine industry experience, her new passion soon became a bold move: creating a new wine château from scratch - one that reflects real life, real people, and real connection.
Today, Sally lives and breathes Château George 7 - a winery and tourism venue - where she produces award-winning wines that celebrate flavour, food, and the joy of sharing. Her wines have been featured in Forbes, The Times, BBC Radio, Channel 4 (UK) and Decanter Magazine. She’s also the author of the bestselling book Make the Midlife Move, a practical and inspiring guide for anyone considering a bold life shift.
Sally is warm, witty, and quietly relentless behind the scenes.
